Pesto Lovers!

We make tons of pesto at home! First, because we love it, and second, because Clementina is quite picky about vegetables... and if it's in pesto form, she happily eats all the colors! 🙃

We make pesto out of everything and use it on everything! With pasta, rice, sweet potatoes, and in salads and quiches! It's simply delicious! 🥰

The pestos we make most often at home are: beetroot, spinach, red cabbage, pumpkin, and eggplant! We vary the dried fruits: walnuts, almonds, pine nuts, hazelnuts, and cashews! When we don't have dried fruits, we make it with seeds; it's different but just as delicious! We use sunflower, sesame, or pumpkin seeds. We also sometimes add herbs, spices, and fruit!

The pesto in the photo is made with beetroot and pine nuts!

🍋 Recipe:

- 1 or 2 beets

- 2 cloves of garlic

- 1 cup of pine nuts

Olive oil, ½ tbsp mustard seeds, ½ tbsp coriander seeds, black pepper and sea salt.

Slice the beets and season with sea salt and olive oil. Bake at 180°C until the beets are well roasted. In a frying pan, sauté the garlic in a little olive oil. Add the black pepper, mustard seeds, coriander seeds, and pine nuts and sauté a little more. Add the beets and mix. Puree everything, adding water little by little until you obtain a creamy and homogeneous mixture.
