Bean Soup!

For cold, rainy days, or even just those days when we need a comforting meal! 💛

.⠀⠀⠀⠀⠀⠀⠀⠀⠀

For us, it has yet another meaning. It reminds us of Brazil. Of Bá. Of the friends who were family for two years. Of the moments when a little bean soup was the treat we needed.

Oh Brazil, you're in our hearts, we've been in love with you for as long as we can remember! 🍀 It will surely be a love for life! 🥰

Recipe:

-2 cups of azuki beans (we usually soak the beans overnight)

-1 leek

-2 or 3 carrots

-3 tbsp homemade tomato sauce

Olive oil, black pepper, and sea salt.

Cook the beans in a pressure cooker with plenty of water. Reserve the bean cooking water. In a saucepan, sauté the leek in a little olive oil. Add the carrots, black pepper, and tomato sauce. Sauté for a little longer. Add the beans and the reserved cooking water and stir. Season with sea salt and let it cook for a few more minutes to enhance the flavor.

We usually eat it warm with some basmati or brown rice.
